Ingredients
- – 16 ounces (454 g) riced cauliflower
- – 12 ounces (340 g) broccoli florets
- – 2 cups (480 ml) cooked shredded chicken
- – 4 slices beef bacon
- – 3 cups (360 g) grated cheddar cheese, divided
- – 2 large eggs
- – 1 teaspoon (5 ml) salt
- – 1 teaspoon (5 ml) garlic powder
- – 1/2 teaspoon (3 ml) mustard powder
- – 1/2 teaspoon (3 ml) cracked pepper
Instructions
- Set your oven to 350°F.
- Cook the cauliflower rice and broccoli until they are soft and fully cooked.
- Cook the beef bacon until it’s crispy, then break it into small bits.
- In a large mixing bowl, combine the cooked cauliflower, broccoli, chicken, bacon, eggs, 2 1/2 cups cheddar cheese, and the seasonings. Mix thoroughly.
- Evenly distribute the mixture in a 9×13-inch baking dish, then top with the remaining 1/2 cup of cheese.
- Place in the oven and bake without covering for half an hour.
- Serve right away.
