A delicious and easy low-carb dish combining shredded chicken, fresh spinach, and mushrooms in a creamy cheese mixture, perfect for a comforting weeknight dinner.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 cup cream cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for greasing the baking dish


Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. Layer the shredded chicken in the dish, followed by fresh spinach and sliced mushrooms.
  3. In a separate bowl, mix cream cheese, mozzarella cheese, garlic powder, salt, and pepper until smooth.
  4. Spread the cheese mixture over the layered ingredients in the baking dish.
  5. Bake for 25-30 minutes, or until the top is bubbly and golden brown.

Notes
