Description

A delicious and creamy low carb keto white chicken chili perfect for a warm family gathering.


Ingredients

  • 1 lb Chicken breast
  • 8 oz Cream cheese
  • 4 cups Chicken broth
  • 1 can Green chilies
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1 tsp Paprika
  • 1 cup Heavy cream
  • 2 tbsp Olive oil
  • 1/4 cup Cilantro, chopped
  • 1 Lime, juiced


Instructions

  1. Sauté the onion and garlic in olive oil until softened.
  2. Add the chicken breast and cook until browned.
  3. Stir in the green chilies, cumin, chili powder, and paprika.
  4. Pour in the chicken broth and bring to a boil, then reduce heat.
  5. Add cream cheese and heavy cream, stirring until smooth.
  6. Simmer until the chili thickens.
  7. Garnish with cilantro and a squeeze of lime juice before serving.

Notes

For extra creaminess, consider adding more heavy cream just before serving.
