Ingredients

  • 1 lb (500g) chicken thighs, cut into 2cm pieces
  • 1 tablespoon butter
  • 2 garlic cloves, crushed
  • 1 cup cream (dairy or dairy-free)
  • 6 tablespoons tomato paste
  • 1 tablespoon tomato sauce (ketchup)
  • 1 teaspoon nutmeg
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 1/2 teaspoon salt
  • 1 cup long grain white rice
  • 1 1/2 cups water
  • 1 teaspoon salt


Instructions

  1. Start by cooking the rice. In a small pot, combine 1 cup of rice with 1 teaspoon of salt and 1 1/2 cups of water. Set over medium heat until bubbles begin to rise. Reduce the heat to low, covering the pot with a lid, wooden board, or plate. Allow it to cook undisturbed for 12 minutes.
  2. Meanwhile, in a large bowl, toss the chicken pieces with nutmeg, turmeric, cumin, garam masala, and salt until evenly coated.
  3. Heat a large frying pan over medium heat. Add the butter, letting it melt before adding the chicken. Cook for a few minutes on each side until the chicken starts to brown.
  4. Add the crushed garlic cloves, cooking for another minute and stirring through the chicken.
  5. Stir in the tomato paste and tomato sauce, cooking for a few minutes to enhance the flavors.
  6. Reduce the heat to low and add the cream, stirring to combine. Bring the sauce to a simmer, continue cooking for an additional 5 minutes, stirring occasionally. Taste and adjust the salt if necessary.
  7. Once the rice is cooked, turn off the heat and let it sit for another 10 minutes before fluffing it with a fork.
  8. Serve the butter chicken alongside the rice and enjoy this cozy meal!

Notes

For deeper flavor, marinate the chicken for an hour. Adjust spices to personal preference for heat.
