Description

A comforting one pan meal of tender chicken breasts and crispy potatoes, seasoned to perfection with garlic and herbs.

Ingredients

  • 4 chicken breasts
  • 4 medium-sized potatoes
  • 3 tablespoons of olive oil
  • 4 garlic cloves, minced
  • Salt, to taste
  • Pepper, to taste
  • Fresh thyme or rosemary, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the potatoes into wedges and place them in a large mixing bowl.
  3. Add olive oil, minced garlic, salt, pepper, and herbs to the potatoes. Toss to coat.
  4. In a baking dish, place the seasoned potatoes and arrange the chicken breasts on top.
  5. Season the chicken with additional salt, pepper, and herbs.
  6. Bake for 25-30 minutes or until the chicken is cooked through and the potatoes are crispy.
  7. Serve hot.

Notes

Consider marinating the chicken for deeper flavor and add veggies like green beans or carrots for a hearty, all-in-one meal.
