Description

A delightful and easy oven-baked Chicken Parmesan featuring a crunchy breadcrumb crust, rich marinara sauce, and gooey mozzarella.


Ingredients

  • 2 large chicken breasts, sliced horizontally into 4 pieces
  • 1 cup fine breadcrumbs (plain or Italian-style)
  • ½ cup grated Parmesan cheese (plus extra for topping)
  • 1 tsp garlic powder
  • 1 large egg, beaten
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella
  • Salt and black pepper to taste
  • Olive oil spray or 1 tbsp olive oil
  • Optional: dried oregano, basil, or red pepper flakes for added flavor, fresh basil or parsley for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the chicken breasts horizontally into 4 thin pieces and season with salt and pepper.
  3. In a bowl, beat the egg. In another bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper together.
  4. Dip each chicken piece in the beaten egg and then coat it thoroughly with the breadcrumb mixture.
  5. Place the coated chicken on a greased baking sheet. Lightly spray the tops with olive oil for an extra crunch.
  6. Bake for 20 minutes, flipping halfway through for an even bake.
  7. After 20 minutes, remove the chicken from the oven. Top each piece with marinara sauce, shredded mozzarella, and more grated Parmesan.
  8. Return to the oven to bake for an additional 5-10 minutes, until the cheese melts and bubbles.

Notes

For added flavor, consider seasoning with dried oregano, basil, or red pepper flakes. Garnish with fresh herbs for presentation.
