Description

A creamy, cheesy chicken dish with pepper jack cheese, bacon, and ranch seasoning that transforms weeknight dinners into extraordinary meals.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 8 oz softened cream cheese
  • 1 cup shredded pepper jack cheese
  • 1 packet ranch seasoning mix (about 1 oz)
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup chicken broth (optional, for slow cooker)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 cup green onions, chopped (for garnish)


Instructions

  1. For the slow cooker method, place the chicken breasts in your slow cooker.
  2. Sprinkle ranch seasoning, garlic powder, onion powder, and black pepper over the chicken.
  3. If using, pour in the chicken broth.
  4. Dollop softened cream cheese over the top.
  5. Cover and cook on low for 4–5 hours or high for 2–3 hours, until chicken reaches 165°F.
  6. Remove the chicken, shred it, then return to the slow cooker and mix in the cream cheese.
  7. Stir in shredded pepper jack cheese and crumbled bacon, mixing until well combined and melted.
  8. Garnish with chopped green onions before serving.
  9. For the stovetop method, heat a large skillet over medium heat, add chicken breasts and cook for 6–7 minutes per side until browned and cooked through.
  10. Remove chicken and shred it.
  11. In the same skillet, add softened cream cheese, ranch seasoning, garlic powder, onion powder, and pepper. Stir until smooth.
  12. Incorporate shredded chicken, pepper jack cheese, and crumbled bacon. Mix until cheese is melted and everything is combined.
  13. Garnish with green onions and serve hot.

Notes

For a stronger kick, increase pepper jack cheese. Serve over rice, pasta, or baked potatoes for a complete meal.
