Ingredients
- 2 large chicken breasts
- 1/2 cup pesto
- 1 cup mozzarella cheese, shredded
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut a pocket into each chicken breast.
- Stuff each pocket with pesto and mozzarella cheese.
- Season the outside of the chicken breasts with olive oil, salt, and pepper.
- Place the stuffed chicken in a baking dish and cover with foil.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and juices run clear.
