Ingredients
- 1 pound boneless, skinless chicken breasts, diced
- 1 cup pineapple chunks (fresh or canned)
- 2 cups cooked rice (white or brown)
- 1 cup sweet and sour sauce
- 1 tablespoon vegetable oil
Instructions
- In a large skillet, heat the vegetable oil over medium-high heat.
- Add the diced chicken to the skillet and cook until it’s no longer pink, about 5-7 minutes.
- Stir in the pineapple chunks, allowing them to warm through for about 2-3 minutes.
- Add the sweet and sour sauce to the skillet, mixing well to coat the chicken and pineapple.
- Let the mixture simmer for 5 minutes to blend the flavors and thicken the sauce slightly.
- Add the cooked rice to the skillet, mixing everything together until heated through.
- Remove from heat and serve immediately, garnished with green onions if desired.
