A delightful sweet and savory pineapple chicken dish served over fluffy rice, perfect for gatherings or weeknight dinners.
Ingredients
- 1 lb (450 g) chicken breast, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup (165 g) pineapple chunks, fresh or canned (drained)
- 1/4 cup (60 ml) soy sauce
- 2 tablespoons honey
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground ginger
- 1 cup (185 g) long-grain white rice
- 2 cups (480 ml) water
Instructions
- Rinse the rice under cold water, then combine it with water in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 15–18 minutes until tender. Set aside.
- Heat olive oil in a large skillet over medium heat.
- Add the chicken pieces and cook for 5–7 minutes until lightly golden and cooked through.
- Add the chopped onion and cook for 2–3 minutes until softened. Stir in the garlic and cook for 30 seconds.
- Add the pineapple chunks, soy sauce, honey, black pepper, and ground ginger. Stir well to coat the chicken evenly.
- Reduce heat to low and simmer for 5–7 minutes, allowing the sauce to thicken slightly.
- Serve the pineapple chicken over the cooked rice and enjoy warm.
Notes
Marinate the chicken for added flavor. For a vegetarian version, replace chicken with firm tofu.
