Description

A simple and satisfying ranch chicken dish made in a crockpot, perfect for busy weeknights.

Ingredients

  • 2 pounds boneless, skinless chicken breasts (cut into 1-inch pieces if desired)
  • 1 packet (about 1 ounce) dry ranch dressing mix
  • 8 ounces cream cheese, softened
  • 1 cup low-sodium chicken broth
  • 1 teaspoon garlic powder (or 2 minced cloves fresh garlic)

Instructions

  1. Layer chopped chicken at the bottom of the crockpot.
  2. Spread softened cream cheese over the chicken.
  3. Sprinkle garlic-ranch seasoning mix over the cream cheese.
  4. Pour low-sodium chicken broth over the layers ensuring the chicken is covered.
  5. Set the crockpot to low for 6-8 hours or high for 3-4 hours.
  6. Check internal temperature; it should reach at least 165°F (74°C).

Notes

Consider marinating the chicken in the ranch seasoning for enhanced flavor. Customize with vegetables for added nutrition.
