Description
Delicious and crispy soy garlic chicken thighs, perfect for a quick weeknight dinner.
Ingredients
- 1 lb boneless, skinless chicken thighs
- 3 tbsp potato starch
- 3 tbsp all-purpose flour
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 tbsp neutral oil for pan-frying
- 8 minced garlic cloves
- 2 stalks of green onion (white and green parts separated)
- 1 tsp red chili flakes
- 1/2 cup chicken stock (or substitute with water and chicken bouillon)
- 3 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp dark soy sauce
- 1 tsp cornstarch
Instructions
- Dry the chicken thighs with a paper towel.
- Mix potato starch, all-purpose flour, garlic powder, salt, and black pepper on a large plate.
- Coat the chicken thighs on both sides with the dry mix.
- Heat oil in a large frying pan over medium-high heat.
- Add chicken thighs and fry until golden brown, about 7 minutes per side. Remove and set aside.
- Add minced garlic, white part of green onion, and red chili flakes to the pan. Sauté for about 3 minutes.
- Incorporate the sauce mixture and cook for 1 minute until thickened.
- Return the chicken to the pan and cook for an additional 5 minutes.
Notes
Use a meat thermometer to ensure chicken reaches 165°F (74°C). Customize the spice level with red chili flakes.
