Description

Delicious and crispy soy garlic chicken thighs, perfect for a quick weeknight dinner.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 3 tbsp potato starch
  • 3 tbsp all-purpose flour
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp neutral oil for pan-frying
  • 8 minced garlic cloves
  • 2 stalks of green onion (white and green parts separated)
  • 1 tsp red chili flakes
  • 1/2 cup chicken stock (or substitute with water and chicken bouillon)
  • 3 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp dark soy sauce
  • 1 tsp cornstarch


Instructions

  1. Dry the chicken thighs with a paper towel.
  2. Mix potato starch, all-purpose flour, garlic powder, salt, and black pepper on a large plate.
  3. Coat the chicken thighs on both sides with the dry mix.
  4. Heat oil in a large frying pan over medium-high heat.
  5. Add chicken thighs and fry until golden brown, about 7 minutes per side. Remove and set aside.
  6. Add minced garlic, white part of green onion, and red chili flakes to the pan. Sauté for about 3 minutes.
  7. Incorporate the sauce mixture and cook for 1 minute until thickened.
  8. Return the chicken to the pan and cook for an additional 5 minutes.

Notes

Use a meat thermometer to ensure chicken reaches 165°F (74°C). Customize the spice level with red chili flakes.
