Description

Ingredients

  • 2 cups cooked chicken, chopped
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cooked rice or quinoa
  • 1 bell pepper, diced
  • 1 small red onion, diced
  • 1 avocado, sliced
  • 1 cup black beans, rinsed and drained
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving


Instructions

  1. In a large bowl, combine the chicken, corn, rice or quinoa, bell pepper, onion, black beans, cumin, chili powder, salt, and pepper. Stir until well mixed.
