Ingredients

  • – 1 pound (454 g) ground beef
  • – 2 green onions, end trimmed, finely minced
  • – 1 large egg
  • – 1/2 lime, zested
  • – 1/2 cup (60 g) panko breadcrumbs
  • – 1 tablespoon (15 ml) minced fresh cilantro
  • – 1 tablespoon (15 ml) grated ginger
  • – 1 tablespoon (15 ml) grated lemongrass
  • – 1 tablespoon (15 ml) grated garlic
  • – 1 teaspoon (5 ml) kosher salt
  • – 1/4 cup (60 ml) sweet chili sauce


Instructions

  1. Heat your oven to 350 degrees F and lightly coat an 8×8 baking dish with nonstick spray; set it aside.
  2. In a large mixing bowl, combine the ground beef, minced green onions, egg, lime zest, panko breadcrumbs, chopped cilantro, grated ginger, lemongrass, garlic, and kosher salt.
  3. Mix everything thoroughly using your hands or a large spoon until the ingredients are well blended together.
  4. Form the mixture into balls, each about the size of 2 tablespoons, and arrange them in the prepared baking dish.
  5. Place the dish in the oven and let the meatballs bake for 10 minutes.
  6. Take the dish out of the oven and generously brush the tops of the meatballs with sweet chili sauce.
  7. Return the dish to the oven and cook for an additional 5-10 minutes, or until the meatballs are fully cooked and the sauce has become sticky.
  8. Once done, remove the dish from the oven and serve the meatballs with extra sweet chili sauce for dipping.

Notes

  • Enhance the citrus flavor by adding extra lime zest to the meatball mixture.
  • Grate more fresh ginger to intensify the ginger flavor in the meatballs.
  • Generously brush sweet chili sauce on top of the meatballs for a delicious glaze.
