Delicious and flavorful Thai baked chicken meatballs, combining spices and herbs for a delightful meal.


Ingredients

  • 1 pound ground chicken
  • 1 tablespoon red curry paste
  • 1 tablespoon fresh ginger, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup cilantro, chopped
  • 1 egg
  • Salt and pepper, to taste
  • For the Peanut Dipping Sauce:
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 tablespoon water


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground chicken, red curry paste, ginger, breadcrumbs, cilantro, egg, salt, and pepper. Mix until well blended.
  3. Form the mixture into meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes or until cooked through and golden brown.
  5. For the dipping sauce, whisk together peanut butter, soy sauce, honey, lime juice, and water until smooth.
  6. Serve the meatballs warm with the peanut dipping sauce.

Notes

For extra flavor, consider adding chopped green onions or more red curry paste. Use gluten-free breadcrumbs if needed.
