Ingredients
- 1 pound ground chicken
- 1 tablespoon red curry paste
- 1 tablespoon fresh ginger, minced
- 1/2 cup breadcrumbs
- 1/4 cup cilantro, chopped
- 1 egg
- Salt and pepper, to taste
- For the Peanut Dipping Sauce:
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 tablespoon water
Instructions
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine ground chicken, red curry paste, ginger, breadcrumbs, cilantro, egg, salt, and pepper. Mix until well blended.
- Form the mixture into meatballs and place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until cooked through and golden brown.
- For the dipping sauce, whisk together peanut butter, soy sauce, honey, lime juice, and water until smooth.
- Serve the meatballs warm with the peanut dipping sauce.
Notes
For extra flavor, consider adding chopped green onions or more red curry paste. Use gluten-free breadcrumbs if needed.
