A flavorful and easy-to-make Thai chicken satay served with a rich peanut sauce, perfect for family dinners or entertaining guests.
Ingredients
- 1 pound chicken breasts or thighs
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1/4 cup coconut milk
- 1/2 teaspoon salt
- Skewers (if grilling)
- Vegetables (e.g., bell peppers, zucchini)
- Rice (for serving)
Instructions
- If using skewers, soak them in water for 30 minutes.
- In a bowl, mix peanut butter, soy sauce, brown sugar, lime juice, minced garlic, coconut milk, and salt to create the marinade.
- Cut chicken into strips and marinate for at least 30 minutes.
- Preheat grill or oven to medium-high heat.
- Thread marinated chicken onto skewers (if using).
- Grill or bake the chicken for 10-15 minutes, turning occasionally until cooked through.
- Serve with additional peanut sauce and your choice of veggies and rice.
