Ingredients

  • 1 pound chicken breasts or thighs
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1/4 cup coconut milk
  • 1/2 teaspoon salt
  • Skewers (if grilling)
  • Vegetables (e.g., bell peppers, zucchini)
  • Rice (for serving)


Instructions

  1. If using skewers, soak them in water for 30 minutes.
  2. In a bowl, mix peanut butter, soy sauce, brown sugar, lime juice, minced garlic, coconut milk, and salt to create the marinade.
  3. Cut chicken into strips and marinate for at least 30 minutes.
  4. Preheat grill or oven to medium-high heat.
