Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • Feta cheese, crumbled or cut into small cubes
  • Fresh mint leaves, whole
  • Extra virgin olive oil, for drizzling (optional)
  • Balsamic glaze, for drizzling
  • Freshly cracked black pepper, to taste
  • Wooden or bamboo skewers, about 6 inches long


Instructions

  1. Rinse and dry the watermelon. Cut it into 1-inch cubes, ensuring you remove any seeds or rind.
  2. Prepare the feta by cutting it into cubes roughly the same size as the watermelon or crumbling it if preferred.
  3. Rinse the fresh mint leaves and pat them dry with a paper towel.
  4. Thread one cube of watermelon, one mint leaf, and one feta cube onto each skewer. You can repeat this process if your skewer length allows, but usually, one set per skewer works well.
  5. Lay the skewers on a serving platter. Drizzle lightly with extra virgin olive oil and balsamic glaze. Finish with freshly cracked black pepper.
  6. Serve immediately or chill covered in the refrigerator for up to 2 hours before serving. For the best flavor, let the skewers come slightly to room temperature before serving.
