Ingredients

  • 907 g (2 pounds) boneless skinless chicken breast, trimmed and cut in half horizontally
  • 80 ml (1/3 cup) olive oil or vegetable oil
  • 1/2 bunch cilantro, finely chopped, about 240 g (1 cup)
  • 1 large lime, zested and juiced (about 60 ml or 1/4 cup juice)
  • 5 g (1 teaspoon) garlic powder
  • 5 g (1 teaspoon) cumin
  • 5 g (1 teaspoon) salt
  • 5 g (1 teaspoon) black pepper
  • 3 large avocados (or 4 medium) – peeled, pitted and diced
  • 2 large roma tomatoes
  • 1/2 bunch cilantro, finely chopped
  • 60 g (1/4 cup) yellow onion, finely chopped
  • 15 ml (1 tablespoon) lime juice
  • 5 g (1 teaspoon) salt
  • 5 g (1 teaspoon) garlic powder
  • pinch of cumin


Instructions

  1. Blend together the ingredients for the chicken marinade. For extra flavor, pierce the chicken breasts all over with a fork before immersing them in the marinade. It’s a fun way to release some stress!
  2. Allow the chicken to soak in the marinade for at least 30 minutes, or as long as overnight.
  3. GRILL: On a grill preheated to 450 degrees, cook the marinated chicken for 5-6 minutes per side, discarding the marinade. Flip only once, ensuring the internal temperature reaches 165.
  4. STOVE: After discarding the marinade, cook the chicken in a lightly oiled pan over medium-high heat for 6-7 minutes on each side, checking that it’s fully cooked with no pink remaining.
  5. AIR FRY: Although grilling and stovetop cooking are preferred for the crispy texture they provide, air frying at 350 for around 15 minutes or until fully cooked is also an option.
  6. While the chicken cooks, mix together the salsa ingredients in a bowl and keep it in the refrigerator until needed.
  7. Once the chicken is done, serve it topped with the prepared salsa and enjoy!
