A quick and easy recipe for creamy Cajun chicken pasta that transforms weeknight dinners with bold flavors and comforting textures.
Ingredients
- 2 boneless, skinless chicken breasts, sliced or cubed
- 1 tablespoon Cajun seasoning blend
- 8 ounces fettuccine or preferred pasta
- 1 cup heavy cream or half-and-half
- 1 cup freshly grated Parmesan cheese
Instructions
- Cook the pasta in a large pot of boiling salted water according to package instructions until al dente, about 8-12 minutes. Drain and reserve a bit of cooking liquid.
- In a large skillet, heat a drizzle of olive oil over medium-high heat. Add the chicken and sprinkle with Cajun seasoning. Cook until golden brown and fully cooked through, about 6-8 minutes.
- Reduce the heat to medium-low. Pour the heavy cream into the skillet and whisk in the Parmesan cheese to create a smooth sauce. Simmer until thickened.
- Add the cooked pasta to the skillet and toss to coat in the creamy sauce. Adjust the sauce consistency with reserved pasta water if necessary.
