Ingredients

  • 1 pound Boneless Skinless Chicken Breast
  • 1 tablespoon Taco Seasoning
  • 8 oz Salsa
  • 15 oz Black Beans (Rinsed and drained)
  • 1 cup Frozen Corn

Instructions

  1. Pour the salsa into the crockpot.
  2. Add the chicken breast.
  3. Sprinkle taco seasoning over the chicken.
  4. Add the rinsed and drained black beans.
  5. Mix in the frozen corn.
  6. Stir gently to combine, ensuring sauce is underneath the chicken.
  7. Cook on LOW for 480 minutes or on HIGH for 240 minutes.
  8. After cooking, shred the chicken with a fork.

Notes

For enhanced flavor, consider marinating the chicken in salsa overnight. Check on it halfway through cooking and add a splash of chicken broth if needed.
