Description
Delightful, hearty ground turkey rice bowls packed with flavor and perfect for sharing.
Ingredients
- 1 tbsp olive oil
- 1 lb ground turkey
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 1 packet (1 oz) taco seasoning or 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 cup water or chicken broth
- 1 (15 oz) can black beans (rinsed and drained)
- 1 cup frozen corn
- 4 cups cooked rice (brown or white)
- Optional toppings: salsa, avocado slices, sour cream or Greek yogurt, shredded cheese, fresh cilantro (chopped), lime wedges
Instructions
- Prepare the rice according to package directions and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until softened, about 3-5 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Add ground turkey, breaking it up with a spoon, and cook until browned, about 5-7 minutes.
- Drain excess grease if necessary.
- Stir in taco seasoning (or a mix of chili powder, cumin, and paprika) and water or chicken broth. Bring to a simmer and cook for 2-3 minutes.
- Add black beans and frozen corn, cooking for another 3-5 minutes until heated through.
- Assemble bowls by placing rice at the bottom and topping with ground turkey mixture.
- Add desired toppings and serve with lime wedges on the side.
Notes
For added flavor, experiment with different toppings and spices according to your preference.
