Description

Delightful, hearty ground turkey rice bowls packed with flavor and perfect for sharing.


Ingredients

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 packet (1 oz) taco seasoning or 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 cup water or chicken broth
  • 1 (15 oz) can black beans (rinsed and drained)
  • 1 cup frozen corn
  • 4 cups cooked rice (brown or white)
  • Optional toppings: salsa, avocado slices, sour cream or Greek yogurt, shredded cheese, fresh cilantro (chopped), lime wedges


Instructions

  1. Prepare the rice according to package directions and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until softened, about 3-5 minutes.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Add ground turkey, breaking it up with a spoon, and cook until browned, about 5-7 minutes.
  5. Drain excess grease if necessary.
  6. Stir in taco seasoning (or a mix of chili powder, cumin, and paprika) and water or chicken broth. Bring to a simmer and cook for 2-3 minutes.
  7. Add black beans and frozen corn, cooking for another 3-5 minutes until heated through.
  8. Assemble bowls by placing rice at the bottom and topping with ground turkey mixture.
  9. Add desired toppings and serve with lime wedges on the side.
