A delightful dish of tender chicken breasts stuffed with a creamy mixture of sautéed mushrooms, spinach, and cheese, perfect for family dinners.
Ingredients
- 4 chicken breasts
- 8 oz mushrooms, chopped
- 1 cup cream cheese, softened
- 1 cup spinach, chopped
- 1 garlic clove, minced
- 1/2 cup parmesan cheese, grated
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté the garlic and mushrooms until tender.
- Add the spinach and cook until wilted, then remove from heat.
- In a bowl, mix the mushroom mixture with cream cheese and parmesan. Season with salt and pepper.
- Cut a pocket into each chicken breast and stuff with the mushroom mixture.
- Place the stuffed chicken in a baking dish, drizzle with olive oil, and season with salt and pepper.
- Bake for 25-30 minutes or until the chicken is cooked through.
- Let rest for a few minutes before serving.
Notes
For maximum flavor, season the chicken inside and out. Ensure the chicken is cooked to an internal temperature of 165°F (75°C).
