Description

A comforting dish combining the rich flavors of French onion soup with tender chicken, topped with melted Gruyere cheese.


Ingredients

  • 4 medium chicken breasts
  • 2 tablespoons avocado oil
  • 3 medium sweet onions, sliced
  • 35 garlic cloves, minced
  • 2 teaspoons fresh thyme, chopped
  • 1 cup beef broth
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • 1 cup shredded Gruyere cheese
  • Fresh thyme for garnish (optional)


Instructions

  1. Heat a large oven-safe skillet over medium-high heat. Add 1 tablespoon of avocado oil. Sear the chicken breasts for 2-3 minutes per side until they develop a nice golden-brown crust.
  2. Transfer the chicken to a plate and cover it with foil to keep warm.
  3. Lower the heat to medium. Add the remaining oil if necessary, then toss in the sliced onions. Cook for 15-20 minutes, stirring frequently until the onions turn soft and achieve a golden brown caramelization.
  4. Incorporate the minced garlic and fresh thyme into the onions. Sauté for an additional 1-2 minutes until fragrant.
  5. Pour in the beef broth and balsamic vinegar, ensuring to stir well to combine the flavors. Season with salt and pepper to taste.
  6. Return the seared chicken to the skillet, nestling it amongst the onions. Spoon some of the sauce over each piece, and allow it to simmer uncovered for 15-20 minutes, flipping halfway through.
  7. Top the chicken with the caramelized onion sauce and sprinkle shredded Gruyere cheese over the top. Broil for a few minutes until the cheese becomes melted and bubbly.
  8. Garnish with fresh thyme leaves before serving hot.

Notes

For added depth of flavor, consider incorporating Worcestershire sauce into the broth. Ensure proper temperatures with a meat thermometer to avoid overcooked chicken.
