A comforting dish combining the rich flavors of French onion soup with tender chicken, topped with melted Gruyere cheese.
Ingredients
- 4 medium chicken breasts
- 2 tablespoons avocado oil
- 3 medium sweet onions, sliced
- 3–5 garlic cloves, minced
- 2 teaspoons fresh thyme, chopped
- 1 cup beef broth
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- 1 cup shredded Gruyere cheese
- Fresh thyme for garnish (optional)
Instructions
- Heat a large oven-safe skillet over medium-high heat. Add 1 tablespoon of avocado oil. Sear the chicken breasts for 2-3 minutes per side until they develop a nice golden-brown crust.
- Transfer the chicken to a plate and cover it with foil to keep warm.
- Lower the heat to medium. Add the remaining oil if necessary, then toss in the sliced onions. Cook for 15-20 minutes, stirring frequently until the onions turn soft and achieve a golden brown caramelization.
- Incorporate the minced garlic and fresh thyme into the onions. Sauté for an additional 1-2 minutes until fragrant.
- Pour in the beef broth and balsamic vinegar, ensuring to stir well to combine the flavors. Season with salt and pepper to taste.
- Return the seared chicken to the skillet, nestling it amongst the onions. Spoon some of the sauce over each piece, and allow it to simmer uncovered for 15-20 minutes, flipping halfway through.
- Top the chicken with the caramelized onion sauce and sprinkle shredded Gruyere cheese over the top. Broil for a few minutes until the cheese becomes melted and bubbly.
- Garnish with fresh thyme leaves before serving hot.
Notes
For added depth of flavor, consider incorporating Worcestershire sauce into the broth. Ensure proper temperatures with a meat thermometer to avoid overcooked chicken.
