Ingredients
- – 1 tablespoon (15 ml) olive oil
- – 1 lb (450 g) boneless skinless chicken thighs, cut into bite-sized pieces
- – salt and pepper to taste
- – 12 oz (340 g) mushrooms, sliced
- – 4 tablespoons (60 g) vegetable oil, divided use
- – 1 teaspoon (5 ml) Italian seasoning
- – 1 tablespoon (15 ml) minced garlic
- – 2 teaspoons (10 ml) lemon juice
- – 1 tablespoon (15 ml) chopped parsley
Instructions
- Warm the olive oil in a large skillet over medium-high heat. Generously sprinkle salt and pepper over the chicken pieces.
- Arrange the chicken pieces in the skillet in a single layer; work in batches if necessary. Sear for 3-4 minutes on each side until they turn a nice golden color.
- Take the chicken out of the skillet and cover it to retain heat.
- In the same skillet, melt 1 tablespoon of vegetable oil. Add the mushrooms, seasoning them with salt and pepper.
- Sauté the mushrooms for 4-5 minutes until they become tender and golden.
- Return the chicken to the skillet. Add the remaining 3 tablespoons of vegetable oil along with the Italian seasoning, stirring until the oil is fully melted.
- Mix in the minced garlic and cook for 1 minute. Pour in the lemon juice and sprinkle the chopped parsley on top, then serve immediately.
