Ingredients
- 2 medium chicken breast (450g)
- 1 teaspoon EACH salt (7g), garlic powder (2g), or oregano (1g)
- 1/2 teaspoon EACH black pepper (1g), chili powder (1g)
- 1 tablespoon (15 ml) olive oil
- 1/4 cup vegetable oil (60ml, divided)
- 3-4 cloves garlic minced
- 1 teaspoon (5 ml) Italian seasoning
- 1/2 teaspoon (3 ml) crushed red pepper
- 3-4 cups broccoli florets (or broccolini) (360-480g)
- 1/4 cup water or chicken broth (60ml)
- 1 tablespoon (15 ml) lemon juice (or juice of 1/2 lemon)
Instructions
- Slice the chicken breasts horizontally to create four portions and sprinkle both sides with salt, garlic powder, black pepper, and chili powder.
- Warm up olive oil in a large skillet over a medium-high flame, then introduce 2 tablespoons of vegetable oil followed by the chicken slices. Cook each side for 4-5 minutes until they are nicely browned and thoroughly cooked.
- Take the chicken out of the skillet and add the remaining vegetable oil, minced garlic, Italian seasoning, and crushed red pepper to the pan. Stir for about a minute until the garlic releases its aroma, then add the broccoli, water, and lemon juice. Let the broccoli cook for 2-3 minutes until it reaches the desired tenderness.
- Place the chicken back into the skillet and, if you wish, garnish with parsley, cilantro, or lemon. Serve promptly.
