Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1/2 cup chicken broth


Instructions

  1. Begin by prepping your ingredients. Toss the chicken, quartered potatoes, and carrot chunks into the slow cooker.
  2. Next, prepare the garlic butter sauce. In a bowl, combine the melted butter, garlic, Italian seasoning, salt, pepper, and chicken broth.
  3. Pour the garlic butter mixture over the chicken and vegetables. Stir gently to coat all pieces.
  4. Cover the slow cooker and set it to cook on LOW for 6–7 hours or HIGH for 3–4 hours.
