Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 1.5 lbs baby red potatoes, quartered
- 1 lb whole carrots, peeled and cut into chunks
- 6 cloves garlic, minced
- 1/2 cup (1 stick) unsalted butter, melted
- 1 tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp chopped parsley (optional, for garnish)
- 1/2 cup chicken broth
Instructions
- Begin by prepping your ingredients. Toss the chicken, quartered potatoes, and carrot chunks into the slow cooker.
- Next, prepare the garlic butter sauce. In a bowl, combine the melted butter, garlic, Italian seasoning, salt, pepper, and chicken broth.
- Pour the garlic butter mixture over the chicken and vegetables. Stir gently to coat all pieces.
- Cover the slow cooker and set it to cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- When the time is up, garnish with fresh parsley if desired.
Notes
For a crispy finish, transfer everything to a baking dish and place it under the broiler for a few minutes.
