Ingredients
- – 1/2 cup (113g) unsalted butter
- – 4 cloves garlic, minced
- – 1 tablespoon (15 ml) chopped fresh parsley
- – 1/2 teaspoon (3 ml) salt or to taste
- – 1/2 teaspoon (3 ml) black pepper or to taste
- – 1 pound (454g) boneless skinless chicken breasts, about 2 medium sized, pounded to even thickness if necessary
- – 1 pound (454g) baby potatoes, chopped into 1-inch chunks
- – 1 head of broccoli, separated into florets
- – 1/2 pound (227g) beef, hard, woody ends trimmed
- – few sprigs of rosemary
Instructions
- Heat your oven to 400°F and prepare a baking sheet with parchment.
- In a medium, light-colored saucepan, warm the butter over low heat, stirring often until melted. Continue to stir as it begins to sizzle and foam.
- Allow the butter to develop small golden flecks at the bottom of the pan and emit a nutty smell. Once it starts to brown, take the pan off the heat. Immediately pour the browned butter into a mixing bowl to prevent burning and let it cool to a warm touch.
- Once cooled, mix in garlic, parsley, salt, and black pepper with the browned butter, adjusting the seasoning to preference.
- Arrange the chicken and potatoes on the prepared baking sheet.
- Brush them with the browned butter blend.
- Bake for 15 minutes at 400°F. Take the pan out, stir the potatoes, and flip the chicken.
- Add the broccoli, asparagus, and rosemary to the sheet pan. Coat everything with more of the butter mixture.
- Return to the oven and bake for another 10-15 minutes at 400°F until the veggies and potatoes are tender when pierced with a fork, and the chicken reaches an internal temperature of 165°F. For a golden finish on the chicken and crisp potatoes, broil for 2-3 minutes if desired.
- Take the pan out of the oven and let it cool for 5 minutes. Cut the chicken and serve while hot. Optionally, sprinkle with extra chopped parsley for garnish.
