A simple yet flavorful weeknight dinner featuring golden-brown chicken and diced potatoes cooked in garlic butter.
Ingredients
- 4 chicken thighs or breasts
- 4 medium-sized potatoes, diced
- 4 tablespoons butter
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat.
- Season the chicken with salt and pepper and place it in the skillet. Cook until golden brown, about 6–7 minutes per side. Remove the chicken from the skillet and set it aside.
- In the same skillet, add the remaining butter and minced garlic. Cook for about 1 minute until fragrant.
- Add the diced potatoes to the skillet and cook until golden and tender, about 10–12 minutes, stirring occasionally.
- Return the chicken to the skillet, cover, and cook for an additional 5 minutes until fully cooked through.
- Garnish with fresh parsley before serving.
Notes
For added flavor, consider incorporating a pinch of chili flakes or a squeeze of lemon juice.
