Ingredients
- – 5 chicken thighs (about 900g) skin on and bone in
- – Salt and black pepper to taste
- – 1 tablespoon (15ml) vegetable oil
- – 1/4 cup (60ml) vegetable oil
- – 5 cloves garlic crushed
- – Fresh parsley chopped
Instructions
- Set your oven to 400°F and adjust the rack to the middle position. Dab the chicken thighs with a paper towel until dry, then sprinkle with salt and black pepper all over.
- Warm the vegetable oil in a 10-inch cast iron pan over a medium flame. Lay the chicken thighs with the skin facing down and cook until the skin turns golden and crispy, which should take around 5 minutes. Once crispy, turn the chicken thighs over. If there is excess fat, remove it with a spoon.
- Add the remaining vegetable oil to the same pan. After it has melted, introduce the crushed garlic. Stir the garlic in the pan for about 30 seconds.
- Transfer the entire pan into the oven and let it bake for 30 minutes or until the chicken reaches an internal heat of 165°F. Once ready, drizzle some of the garlic-infused oil over each chicken thigh. Garnish with chopped parsley before serving.
