Ingredients
- 1 lb boneless, skinless chicken breasts or thighs
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp chili powder (optional, for heat)
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 2 tbsp honey
- â…“ cup BBQ sauce (your favorite variety)
- 1 tbsp lemon juice
- 8 small flour or corn tortillas
- ½ cup shredded lettuce
- ½ cup shredded cheese (cheddar or Monterey Jack)
- ¼ cup diced red onion
- ¼ cup chopped cilantro
- Lime wedges, for garnish
Instructions
- Season the chicken with olive oil, salt, pepper, paprika, garlic powder, onion powder, and chili powder in a bowl.
- Heat a skillet over medium-high heat, add the seasoned chicken, and cook for about 5-6 minutes per side until thoroughly cooked. Remove from skillet and let rest before slicing.
- Melt unsalted butter in the same skillet over medium heat, add minced garlic, and sauté for 30 seconds until fragrant.
- Stir in honey, BBQ sauce, and lemon juice, and let simmer for about two minutes until slightly thickened.
- Slice or shred the chicken and toss it in the warm garlic butter honey BBQ sauce until well coated.
- Warm the tortillas in the skillet or microwave. Build each taco with shredded lettuce, saucy chicken, cheese, red onion, and cilantro.
- Serve immediately with lime wedges for garnish and enjoy!
