Delicious tacos featuring tender chicken glazed with a smoky, sweet garlic butter honey BBQ sauce, served with fresh toppings.
Ingredients
- 1 lb boneless, skinless chicken breasts or thighs
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp chili powder (optional)
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 2 tbsp honey
- â…“ cup BBQ sauce
- 1 tbsp lemon juice
- 8 small flour or corn tortillas
- ½ cup shredded lettuce
- ½ cup shredded cheese (cheddar or Monterey Jack)
- ¼ cup diced red onion
- ¼ cup chopped cilantro
- Lime wedges, for garnish
Instructions
- Season the chicken with olive oil, salt, pepper, paprika, garlic powder, onion powder, and chili powder.
- Heat a skillet over medium-high heat and cook the chicken for 5-6 minutes per side until fully cooked and golden brown.
- Remove the chicken and let it rest before slicing or shredding.
- In the same skillet, melt the butter and sauté the minced garlic for about 30 seconds.
- Stir in honey and BBQ sauce, simmer for 2 minutes until thickened.
- Toss the sliced or shredded chicken in the sauce until well coated.
- Warm the tortillas in a skillet or microwave.
- Assemble the tacos with lettuce, the saucy chicken, cheese, red onion, and cilantro. Serve with lime wedges.
