Ingredients

  • Ground beef, 1 pound (450g)
  • Garlic cloves, minced, 4
  • Breadcrumbs, 1/2 cup (60g)
  • Feta cheese, grated, 1/4 cup (25g)
  • Egg, 1
  • Fresh parsley, chopped, 1/4 cup (15g)
  • Salt, 1 teaspoon (5g)
  • Black pepper, 1/2 teaspoon (1g)
  • Vegetable oil, 2 tablespoons (30ml)
  • Margarine, 2 tablespoons (30g)
  • Lemon zest, 1 teaspoon (2g)
  • Lemon juice, 1 tablespoon (15ml)
  • Zucchini, spiralized, 2 medium (about 1 pound or 450g)
  • Red pepper flakes, optional, 1/4 teaspoon (0.5g)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, minced garlic, breadcrumbs, Parmesan cheese, egg, chopped parsley, salt, and black pepper.
  3. Mix the ingredients until well combined.
  4. Form the mixture into small meatballs, about 1 inch in diameter.
  5. Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
  6. Add the meatballs to the skillet and cook until browned on all sides, about 5 minutes.
  7. Transfer the skillet with meatballs to the preheated oven.
  8. Bake the meatballs for 10-12 minutes, until cooked through.
  9. While the meatballs are baking, heat the remaining 1 tablespoon of olive oil and 2 tablespoons of butter in a large pan over medium heat.
  10. Add the spiralized zucchini to the pan and sauté for 2-3 minutes.
  11. Stir in the lemon zest and lemon juice.
  12. Season the zucchini noodles with salt, black pepper, and red pepper flakes if using.
  13. Remove the meatballs from the oven once done.
  14. Serve the meatballs over the lemon zucchini noodles.
  15. Garnish with additional chopped parsley if desired.
