Ingredients
- Ground beef, 1 pound (450g)
- Garlic cloves, minced, 4
- Breadcrumbs, 1/2 cup (60g)
- Feta cheese, grated, 1/4 cup (25g)
- Egg, 1
- Fresh parsley, chopped, 1/4 cup (15g)
- Salt, 1 teaspoon (5g)
- Black pepper, 1/2 teaspoon (1g)
- Vegetable oil, 2 tablespoons (30ml)
- Margarine, 2 tablespoons (30g)
- Lemon zest, 1 teaspoon (2g)
- Lemon juice, 1 tablespoon (15ml)
- Zucchini, spiralized, 2 medium (about 1 pound or 450g)
- Red pepper flakes, optional, 1/4 teaspoon (0.5g)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground turkey, minced garlic, breadcrumbs, Parmesan cheese, egg, chopped parsley, salt, and black pepper.
- Mix the ingredients until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter.
- Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
- Add the meatballs to the skillet and cook until browned on all sides, about 5 minutes.
- Transfer the skillet with meatballs to the preheated oven.
- Bake the meatballs for 10-12 minutes, until cooked through.
- While the meatballs are baking, heat the remaining 1 tablespoon of olive oil and 2 tablespoons of butter in a large pan over medium heat.
- Add the spiralized zucchini to the pan and sauté for 2-3 minutes.
- Stir in the lemon zest and lemon juice.
- Season the zucchini noodles with salt, black pepper, and red pepper flakes if using.
- Remove the meatballs from the oven once done.
- Serve the meatballs over the lemon zucchini noodles.
- Garnish with additional chopped parsley if desired.
