Ingredients

  • 2 pounds (907 g) chicken thighs (907 grams)
  • 1 pound (454 g) carrots (454 grams)
  • 2 tablespoons vegetable oil (30 ml)
  • 4 cloves garlic, minced
  • 1 teaspoon (5 ml) dried thyme (1 gram)
  • 1 teaspoon (5 ml) dried rosemary (1 gram)
  • 1 teaspoon (5 ml) dried oregano (1 gram)
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cut the carrots into sticks.
  3. Place the chicken thighs and carrots in a large baking dish.
  4. Drizzle the olive oil over the chicken and carrots.
  5. Add the minced garlic to the dish.
  6. Sprinkle the dried thyme, rosemary, and oregano over everything.
  7. Season with salt and black pepper to taste.
  8. Toss the chicken and carrots to evenly coat with oil and seasonings.
  9. Arrange the chicken thighs skin-side up in the dish.
  10. Spread the carrots around the chicken thighs.
  11. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through.
  12. Check that the internal temperature of the chicken reaches 165°F (74°C).
  13. Remove the dish from the oven and let it rest for 5 minutes.
  14. Serve the garlic herb chicken and carrots warm.
