Ingredients
- 2 pounds (907 g) chicken thighs (907 grams)
- 1 pound (454 g) carrots (454 grams)
- 2 tablespoons vegetable oil (30 ml)
- 4 cloves garlic, minced
- 1 teaspoon (5 ml) dried thyme (1 gram)
- 1 teaspoon (5 ml) dried rosemary (1 gram)
- 1 teaspoon (5 ml) dried oregano (1 gram)
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cut the carrots into sticks.
- Place the chicken thighs and carrots in a large baking dish.
- Drizzle the olive oil over the chicken and carrots.
- Add the minced garlic to the dish.
- Sprinkle the dried thyme, rosemary, and oregano over everything.
- Season with salt and black pepper to taste.
- Toss the chicken and carrots to evenly coat with oil and seasonings.
- Arrange the chicken thighs skin-side up in the dish.
- Spread the carrots around the chicken thighs.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through.
- Check that the internal temperature of the chicken reaches 165°F (74°C).
- Remove the dish from the oven and let it rest for 5 minutes.
- Serve the garlic herb chicken and carrots warm.
