A flavorful Garlic Honey Crispy Chicken Rice Bowl featuring crispy chicken, fluffy jasmine rice, and a sweet-savory sauce.
Ingredients
- 1 chicken breast
- 30g cornflakes
- 1 egg
- 65g jasmine rice (uncooked)
- 1 spring onion (thinly sliced)
- Sesame seeds (to garnish)
- Sriracha mayonnaise (to garnish)
- 1 & 1/2 tablespoon runny honey
- 1 tablespoon light soy sauce
- 1 tablespoon rice wine
Instructions
- Preheat the oven to 200°C (390°F).
- Cook the jasmine rice according to package instructions.
- In a bowl, crush the cornflakes.
- Dip the chicken breast in the egg, then coat it with crushed cornflakes.
- Place the coated chicken on a baking tray and bake for about 20-25 minutes or until fully cooked and crispy.
- In a small bowl, mix the runny honey, light soy sauce, and sriracha mayonnaise together.
- Once the chicken is done, slice it and serve it over a bed of rice.
- Drizzle with the honey-sriracha sauce, garnish with thinly sliced spring onion and sesame seeds.

Notes
For added texture, crush the cornflakes in a food processor for a finer coating. Serve hot with fresh garnish for the best flavor.
