Ingredients
- 2 lb (907 g) Chicken Breast, cut into 1-inch cubes
- 1 cup (237 ml) Chicken Broth
- 1/3 cup (79 ml) Vegetable Oil
- 1/4 cup (59 ml) Lemon Juice
- 3 Garlic Cloves, minced
- 1/4 cup (59 ml) Apple Cider Vinegar
- 2 tsp (10 ml) Oregano
- 2 tsp (10 ml) Parsley
- 1 tsp (5 ml) Salt
- 1 tsp (5 ml) Pepper
Instructions
- Place the chicken breast pieces into a large resealable bag.
- In a separate bowl, mix together the rest of the ingredients.
- Pour the mixture over the chicken, then seal the bag and massage it to ensure the chicken is evenly coated.
- Allow the chicken to soak in the marinade for a minimum of 4 hours, and up to 24 hours for best results.
- Heat your grill to medium-high, around 425°F.
- Thread the marinated chicken pieces onto skewers, with about 8 pieces per skewer. Discard the leftover marinade.
- Cook the skewers on the grill for 10 minutes, then rotate them to cook for another 10 minutes on the opposite side.
- Take the skewers off the grill. You can serve the chicken directly on the skewers or remove the pieces before serving.
