Ingredients
- 1 pound chicken breast (450 g)
- 2 tablespoons olive oil (30 ml)
- 2 cloves garlic, minced
- 1 lime, juiced
- 1 teaspoon ground cumin (2.5 g)
- 1 teaspoon smoked paprika (2.5 g)
- 1/2 teaspoon salt (2.5 g)
- 1/4 teaspoon black pepper (1.25 g)
- 1 cup uncooked rice (190 g)
- 2 cups chicken broth (480 ml)
- 1/2 cup corn kernels (85 g)
- 1/2 cup chickpeas, rinsed and drained (85 g)
- 1/4 cup chopped cilantro (15 g)
- 1 avocado, diced
- 1/4 cup chopped red onion (40 g)
- 1 tomato, diced
Instructions
- In a bowl, combine olive oil, minced garlic, lime juice, ground cumin, smoked paprika, salt, and black pepper.
- Add the chicken breast to the marinade and coat evenly. Marinate for at least 30 minutes.
- In a pot, bring chicken broth to a boil.
- Add rice to the boiling broth, reduce heat, and cover. Simmer for 15-20 minutes until rice is cooked.
- In a skillet, heat a little olive oil over medium heat.
- Add marinated chicken breast to the skillet and cook for 6-7 minutes on each side until cooked through.
- Remove chicken from the skillet and let it rest for 5 minutes before slicing.
- In a large bowl, combine cooked rice, corn kernels, black beans, chopped cilantro, diced avocado, chopped red onion, and diced tomato.
- Slice the cooked chicken and add it to the rice mixture.
- Toss everything gently to combine.
- Serve the Garlic Lime Chicken Bowls warm.
