Ingredients

  • 1 pound chicken breast (450 g)
  • 2 tablespoons olive oil (30 ml)
  • 2 cloves garlic, minced
  • 1 lime, juiced
  • 1 teaspoon ground cumin (2.5 g)
  • 1 teaspoon smoked paprika (2.5 g)
  • 1/2 teaspoon salt (2.5 g)
  • 1/4 teaspoon black pepper (1.25 g)
  • 1 cup uncooked rice (190 g)
  • 2 cups chicken broth (480 ml)
  • 1/2 cup corn kernels (85 g)
  • 1/2 cup chickpeas, rinsed and drained (85 g)
  • 1/4 cup chopped cilantro (15 g)
  • 1 avocado, diced
  • 1/4 cup chopped red onion (40 g)
  • 1 tomato, diced


Instructions

  1. In a bowl, combine olive oil, minced garlic, lime juice, ground cumin, smoked paprika, salt, and black pepper.
  2. Add the chicken breast to the marinade and coat evenly. Marinate for at least 30 minutes.
  3. In a pot, bring chicken broth to a boil.
  4. Add rice to the boiling broth, reduce heat, and cover. Simmer for 15-20 minutes until rice is cooked.
  5. In a skillet, heat a little olive oil over medium heat.
  6. Add marinated chicken breast to the skillet and cook for 6-7 minutes on each side until cooked through.
  7. Remove chicken from the skillet and let it rest for 5 minutes before slicing.
  8. In a large bowl, combine cooked rice, corn kernels, black beans, chopped cilantro, diced avocado, chopped red onion, and diced tomato.
  9. Slice the cooked chicken and add it to the rice mixture.
  10. Toss everything gently to combine.
  11. Serve the Garlic Lime Chicken Bowls warm.
