Ingredients
- 2 heads garlic (US: 2 heads, metric: 2 heads), top third sliced off and discarded
- olive oil
- 1 tablespoon sea salt (US: 1 tbsp, metric: 15 ml)
- 5 pounds Yukon Gold potatoes, peeled and cubed (US: 5 lbs, metric: 2.3 kg)
- 1 cup sour cream (US: 1 cup, metric: 240 ml)
- 1 cup butter (US: 1 cup, metric: 240 ml)
- 1 (4 ounce) package cream cheese (US: 4 oz, metric: 113 g)
- salt and ground black pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Place the garlic bulbs in a baking dish, applying a tablespoon of olive oil over each.
- Roast in the warmed oven until the garlic is tender and golden-brown, approximately 45 minutes.
- In the meantime, bring a large pot of water to a boil, adding sea salt. Boil the potatoes in the salted water until they are soft, around 30 minutes, then drain.
- Move the potatoes into a large bowl; mix in sour cream, butter, cream cheese, salt, and black pepper. Cover the bowl with a lid or aluminum foil, allowing the butter and cream cheese to soften for about 5 minutes.
- Press the roasted garlic cloves out of their skins into the potato mixture; mash until everything is smooth, creamy, and well combined.
