Learn how to make delicious Garlic Parmesan Chicken Bites that are crispy on the outside, juicy on the inside. Perfect for a quick and tasty meal!
Ingredients
- 3 cloves garlic (15g)
- 1 ounce Parmesan cheese (30g freshly grated or 80g store-bought), plus more for serving
- 3 sprigs fresh parsley
- 1 1/2 pounds boneless, skinless chicken breasts, thighs, or a combination (680g)
- 3/4 teaspoon (4 ml) kosher salt
- 1/4 teaspoon (1 ml) freshly ground black pepper
- 4 tablespoons (60 ml) (1/2 stick) unsalted butter, divided
- Red pepper flakes, for serving (optional)
Instructions
- Crush 3 garlic cloves. If necessary, finely shred 1 ounce of Parmesan cheese using the fine side of a box grater, or measure out 1/3 cup of pre-grated cheese. Remove the leaves from 3 parsley sprigs and chop them finely to make 1 teaspoon.
- Chop 1 1/2 pounds of boneless chicken into 1-inch cubes. Put them in a large mixing bowl, sprinkle with 3/4 teaspoon kosher salt and 1/4 teaspoon black pepper, and mix until well coated.
- In a large cast iron or stainless steel frying pan, melt 2 tablespoons of unsalted butter over medium heat. Lay half of the chicken pieces in a single layer. Sear until they are golden-brown and release easily from the pan, which should take about 4 minutes. Stir and continue cooking until the opposite side is golden-brown and fully cooked, roughly another 2 minutes.
- Move the chicken to a plate. Melt 1 tablespoon of unsalted butter in the pan and cook the rest of the chicken in the same manner. Place it onto the same plate once done.
- Turn the heat down to low. Add the last tablespoon of unsalted butter, garlic, chicken, and any juices from the plate back into the pan. Cook until the butter is melted and the garlic’s aroma is noticeable, approximately 1 minute. Take the pan off the heat, sprinkle with Parmesan cheese, and mix to combine. Sprinkle with chopped parsley, additional Parmesan, and red pepper flakes if you wish.
