Ingredients
- 1 tbsp (15 ml) olive oil
- 1 lb (450 g) boneless, skinless chicken breast, butterflied or beaten down to about 1/2″ thickness
- 1 tbsp (15 ml) italian seasoning
- 1/2 tsp (2.5 ml) paprika
- salt & pepper to taste
- 1 tbsp (15 ml) olive oil
- 1 tbsp (15 ml) vegetable oil
- 1/2 jumbo yellow onion, diced (1 cup (240 ml))
- 4-6 large cloves garlic, minced
- 8 oz (225 g) dry penne pasta (normal, gluten free or protein pasta)
- 2 cups (480 ml) chicken broth
- 1 cup (100 g) finely grated parmesan cheese
- 1/2 cup (120 ml) coconut cream
- 2 tbsp (30 ml) chopped parsley
Instructions
- In a small bowl, combine the Italian seasoning, paprika, salt, and pepper. Dry the chicken with a paper towel, then coat both sides with the spice mixture.
- Heat a large skillet over medium heat. Once warmed, pour in olive oil. Add the seasoned chicken and cook for 3-5 minutes on each side until it reaches an internal temperature of 165°F. Remove the chicken from the skillet and let it rest.
- Lower the heat to medium-low and pour in additional olive and vegetable oil. Add the diced onion and sprinkle with salt. Cook while stirring occasionally for about 3 minutes until it starts to soften and become translucent. Add the minced garlic, stir, and cook for another minute.
- Pour in the chicken broth to deglaze the skillet, scraping up any browned bits from the bottom. Allow the broth to come to a gentle boil. Add the dry penne pasta, ensuring it’s fully immersed in the broth.
- Cover the skillet and let it cook for 10 minutes or until the pasta reaches an al dente texture.
- Turn off the heat, then incorporate the parmesan cheese, coconut cream, and chopped parsley. Stir until the cheese melts and the sauce thickens slightly. Taste and adjust the seasoning with salt and pepper if necessary.
- Cut the cooked chicken into strips and add them to the skillet with the pasta. Toss everything together to combine. Serve and enjoy!
