Description

Delicious and flavorful chicken skewers marinated in garlic, Parmesan, and Italian herbs, perfect for grilling.


Ingredients

  • 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Optional: pinch of red pepper flakes


Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, combine olive oil, minced garlic, Parmesan cheese, Italian herbs, salt, and black pepper. Mix well to create the marinade.
  3. Add the chicken cubes to the marinade and toss until evenly coated. Cover and refrigerate for at least 30 minutes or up to 2 hours for more flavor.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
  7. Remove from the grill and let rest for a few minutes. Garnish with chopped parsley before serving.

Notes

Marinate the chicken longer for deeper flavor. Consider adding red pepper flakes for a spicy kick.
