Ingredients
- – 2 lbs (900g) chicken tenders, thighs or breast
- – 2 tbsp (30ml) olive oil
- – 1 stick unsalted butter
- – 8-10 cloves garlic, minced
- – 1/2 cup (60g) vegetarian parmesan, grated
- – 1 tbsp (15ml) hot sauce more if desired
- – 2 teaspoons (10 ml) red pepper flakes
- – 1/3 cup (80ml) fresh parsley, minced
- – 2 teaspoons (10 ml) paprika
- – 1 teaspoon (5 ml) garlic powder
- – 1 teaspoon (5 ml) onion powder
- – 1/2 teaspoon (3 ml) salt
- – 1/2 teaspoon (3 ml) pepper
Instructions
- Remember to immerse your wooden skewers in water for a minimum of 30 minutes before beginning.
- First, mix the chicken seasoning ingredients in a small dish and keep it aside. Prepare the chicken by slicing it into 3-inch pieces. Place these pieces in a large bowl or resealable bag, then drizzle with olive oil and season with the spices, ensuring they are thoroughly coated on all sides.
- Thread the chicken pieces onto each skewer, packing them closely without gaps for optimal juiciness. Trim the skewers if necessary to fit the air fryer after loading them with chicken.
- Combine butter and minced garlic in a microwave-safe bowl and heat until the butter is partially melted. Stir in red pepper flakes, hot sauce, parsley, and grated parmesan, whisking until well-blended. If the mixture separates, mix in 1-2 tablespoons of softened butter to re-emulsify.
- Take out a third of the sauce to use for brushing the partially cooked chicken; keep the rest for basting the fully cooked chicken to avoid contamination. Ensure you clean the basting brush between uses.
- Cook 2-3 skewers at a time in the air fryer at 400 degrees for 5 minutes. Take them out, turn the skewers over, brush with sauce, and cook for an additional 2 minutes at 400 degrees.
- Turn them again, apply more sauce, and continue cooking for another 5-6 minutes or until the internal temperature reaches 165 degrees, with a total cooking time of 12-14 minutes, though this may vary depending on your air fryer.
- Once done, give them a final coating with the reserved garlic sauce and sprinkle with more parmesan before serving.
