Ingredients
- 2 lbs boneless, skinless chicken breasts, cut into 1-inch thick pieces
- 2 tablespoons extra virgin olive oil
- 4 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup low sodium chicken broth
- 1 cup grated Parmesan cheese (plus extra for serving)
- 1 teaspoon dried Italian herb blend (oregano, basil, thyme, rosemary, marjoram)
- 1/4 teaspoon red pepper flakes (optional)
- Salt, to taste
- Freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until shimmering.
- Place the chicken pieces in a single layer, searing for 3-4 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and cover loosely to keep warm.
- Add the remaining tablespoon of olive oil and 4 tablespoons of butter to the skillet.
- Sauté the minced garlic for about 1-2 minutes until fragrant but not browned.
- Pour in the heavy cream and chicken broth, bringing the mixture to a gentle simmer.
- Reduce the heat to medium-low and stir in the grated Parmesan cheese and dried Italian herbs. Cook until smooth.
- Return the cooked chicken pieces to the skillet, tossing gently to coat in the sauce.
- Simmer for another 2-3 minutes, then remove from heat and garnish with fresh parsley if desired.
Notes
For best results, use fresh garlic and high-quality Parmesan cheese. Serve over rice or pasta, and store leftovers in an airtight container in the refrigerator for up to three days.
