Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese (plus extra for garnish)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • 2 cups fresh spinach or kale (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion, sautéing for 5 minutes until softened and translucent.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add the bite-sized chicken pieces, seasoning with salt and pepper. Cook for 5-7 minutes until no longer pink and golden.
  5. Pour in the chicken broth, and add the dried thyme and basil. Bring to a boil, then reduce heat to low. Simmer for 10-15 minutes.
  6. Lower heat further, then stir in the heavy cream, gradually adding Parmesan cheese until melted and creamy.
  7. If using, stir in the fresh spinach or kale until wilted, about 1-2 minutes.
  8. Taste and adjust seasoning as necessary with additional salt and pepper.
  9. Ladle the soup into bowls and garnish with extra Parmesan cheese and fresh parsley.

Notes

Letting the soup simmer longer helps develop flavors. Consider blending a portion for a thicker texture.
