Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese (plus extra for garnish)
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
- 2 cups fresh spinach or kale (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion, sautéing for 5 minutes until softened and translucent.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the bite-sized chicken pieces, seasoning with salt and pepper. Cook for 5-7 minutes until no longer pink and golden.
- Pour in the chicken broth, and add the dried thyme and basil. Bring to a boil, then reduce heat to low. Simmer for 10-15 minutes.
- Lower heat further, then stir in the heavy cream, gradually adding Parmesan cheese until melted and creamy.
- If using, stir in the fresh spinach or kale until wilted, about 1-2 minutes.
- Taste and adjust seasoning as necessary with additional salt and pepper.
- Ladle the soup into bowls and garnish with extra Parmesan cheese and fresh parsley.
Notes
Letting the soup simmer longer helps develop flavors. Consider blending a portion for a thicker texture.
