Ingredients
- 1 lb (454 g) chicken breasts
- 5 medium sized potatoes (about 1 kg)
- 2 tbsp (30 ml) olive oil
- salt, pepper, garlic powder, paprika (for potatoes)
- 1/2 tsp (2.5 ml) each of salt and pepper
- 1 tsp (5 ml) each of paprika, onion powder, and Italian seasoning
- 2 tbsp (30 ml) minced garlic
- Garlic Parmesan sauce (halal-friendly alternative) just enough to cover chicken
- 1 cup (125 g) of shredded mozzarella cheese
Instructions
- Rinse the potatoes and chop them into small cubes.
- Lightly coat a slow cooker with non-stick spray.
- Place the potato cubes into the slow cooker. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and paprika to taste.
- Incorporate minced garlic and mix the potatoes with the seasonings thoroughly.
- Dice the chicken breasts into small pieces.
- Sprinkle chicken pieces with 1/2 teaspoon each of salt and pepper, and 1 teaspoon each of paprika, onion powder, and Italian herbs.
- Pour a sufficient amount of garlic Parmesan sauce over the chicken pieces to cover them. You can add more sauce after cooking if desired.
- Set the slow cooker to low heat and let it cook for approximately 6 hours or until the potatoes reach your preferred tenderness.
- Give the contents a good stir.
- Sprinkle shredded mozzarella cheese on top and allow it to sit until the cheese has melted.
- Dish out and enjoy! Adding some ranch dressing on top was a delightful addition!
