Ingredients

  • 1 lb (454 g) chicken breasts
  • 5 medium sized potatoes (about 1 kg)
  • 2 tbsp (30 ml) olive oil
  • salt, pepper, garlic powder, paprika (for potatoes)
  • 1/2 tsp (2.5 ml) each of salt and pepper
  • 1 tsp (5 ml) each of paprika, onion powder, and Italian seasoning
  • 2 tbsp (30 ml) minced garlic
  • Garlic Parmesan sauce (halal-friendly alternative) just enough to cover chicken
  • 1 cup (125 g) of shredded mozzarella cheese


Instructions

  1. Rinse the potatoes and chop them into small cubes.
  2. Lightly coat a slow cooker with non-stick spray.
  3. Place the potato cubes into the slow cooker. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and paprika to taste.
  4. Incorporate minced garlic and mix the potatoes with the seasonings thoroughly.
  5. Dice the chicken breasts into small pieces.
  6. Sprinkle chicken pieces with 1/2 teaspoon each of salt and pepper, and 1 teaspoon each of paprika, onion powder, and Italian herbs.
  7. Pour a sufficient amount of garlic Parmesan sauce over the chicken pieces to cover them. You can add more sauce after cooking if desired.
  8. Set the slow cooker to low heat and let it cook for approximately 6 hours or until the potatoes reach your preferred tenderness.
  9. Give the contents a good stir.
  10. Sprinkle shredded mozzarella cheese on top and allow it to sit until the cheese has melted.
  11. Dish out and enjoy! Adding some ranch dressing on top was a delightful addition!
