A comforting and satisfying slow-cooked meal combining tender chicken and golden potatoes with rich garlic and parmesan flavors.
Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 1/2 cup grated parmesan cheese
- 4 cloves minced garlic
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
Instructions
- Wash and halve the baby potatoes.
- Minced the garlic cloves.
- Rub chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes.
- Layer halved potatoes at the bottom of the crockpot, followed by the seasoned chicken.
- Add chicken broth, then sprinkle with minced garlic and grated parmesan cheese.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is cooked through and potatoes are tender.
- Serve with sauce drizzled on top, and garnish with fresh parsley.
Notes
For quicker cooking, cut baby potatoes into smaller pieces. For a crispy finish, place cooked chicken and potatoes in the oven for a few minutes after crockpot cooking.
