Description

A comforting and satisfying slow-cooked meal combining tender chicken and golden potatoes with rich garlic and parmesan flavors.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves minced garlic
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil


Instructions

  1. Wash and halve the baby potatoes.
  2. Minced the garlic cloves.
  3. Rub chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes.
  4. Layer halved potatoes at the bottom of the crockpot, followed by the seasoned chicken.
  5. Add chicken broth, then sprinkle with minced garlic and grated parmesan cheese.
  6. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is cooked through and potatoes are tender.
  7. Serve with sauce drizzled on top, and garnish with fresh parsley.

Notes

For quicker cooking, cut baby potatoes into smaller pieces. For a crispy finish, place cooked chicken and potatoes in the oven for a few minutes after crockpot cooking.
