Ingredients

  • 2 lbs (900 g) chicken thighs
  • 3 tablespoons olive oil (45 ml)

  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (2 g)
  • 1 lemon, sliced
  • 1 cup chicken broth (240 ml)
  • 2 large potatoes, sliced (about 1 lb or 450 g)
  • 1 large onion, sliced


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, minced garlic, chopped rosemary, salt, and black pepper.
  3. Add the chicken thighs to the bowl and toss to coat them evenly with the mixture.
  4. Arrange the chicken thighs in a single layer in a baking dish.
  5. Scatter the sliced potatoes and onion around the chicken in the dish.
  6. Place lemon slices on top of the chicken and potatoes.
