Ingredients
- 2 lbs (900 g) chicken thighs
- 3 tablespoons olive oil (45 ml)
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (15 g)
- 1 teaspoon salt (5 g)
- 1/2 teaspoon black pepper (2 g)
- 1 lemon, sliced
- 1 cup chicken broth (240 ml)
- 2 large potatoes, sliced (about 1 lb or 450 g)
- 1 large onion, sliced
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine olive oil, minced garlic, chopped rosemary, salt, and black pepper.
- Add the chicken thighs to the bowl and toss to coat them evenly with the mixture.
- Arrange the chicken thighs in a single layer in a baking dish.
- Scatter the sliced potatoes and onion around the chicken in the dish.
- Place lemon slices on top of the chicken and potatoes.
- Pour the chicken broth into the baking dish around the chicken and potatoes.
- Cover the dish with aluminum foil.
- Bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 20-25 minutes, or until the chicken is cooked through and golden brown.
- Remove from the oven and let it rest for 5 minutes before serving.
