Description

A comforting classic made with ground chicken, baked to perfection with delightful seasonings and fresh ingredients.


Ingredients

  • 1 pound ground chicken
  • ½ cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, grated
  • ½ cup chopped fresh parsley
  • 1 egg
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Olive oil spray


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, breadcrumbs, onion, garlic, grated carrot, and parsley.
  3. Crack the egg into the mixture and stir everything until well combined.
  4. Season with salt, black pepper, paprika, and oregano. Mix thoroughly.
  5. Shape the mixture into small patties, about the size of a golf ball.
  6. Place the rissoles on the prepared baking sheet, and lightly spray with olive oil.
  7. Bake for 20-25 minutes, or until golden brown and fully cooked.

Notes

Let the mixture rest for at least 15 minutes before shaping for better texture. Experiment with herbs for different flavor profiles.
