Ingredients
- 1 pound ground chicken
- ½ cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, grated
- ½ cup chopped fresh parsley
- 1 egg
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Olive oil spray
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the ground chicken, breadcrumbs, onion, garlic, grated carrot, and parsley.
- Crack the egg into the mixture and stir everything until well combined.
- Season with salt, black pepper, paprika, and oregano. Mix thoroughly.
- Shape the mixture into small patties, about the size of a golf ball.
- Place the rissoles on the prepared baking sheet, and lightly spray with olive oil.
- Bake for 20-25 minutes, or until golden brown and fully cooked.
Notes
Let the mixture rest for at least 15 minutes before shaping for better texture. Experiment with herbs for different flavor profiles.
