Ingredients
- 2 chicken breasts
- 1 cup brown rice or quinoa
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 red onion, sliced
- 1 bell pepper, diced
- 1/2 cup Greek yogurt
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Start by marinating the chicken breasts in olive oil, lemon juice, dried oregano, salt, and pepper for at least 30 minutes.
- While the chicken is marinating, cook the brown rice or quinoa according to package instructions.
- In a bowl, mix the Greek yogurt, minced garlic, and a pinch of salt to create the tzatziki sauce.
- Heat a grill or skillet over medium-high heat and cook the marinated chicken for 7-8 minutes on each side, or until cooked through. Remove from heat and let it rest before slicing.
- Assemble the bowls by placing a serving of rice or quinoa at the bottom, then adding sliced chicken, cucumbers, cherry tomatoes, red onion, and bell pepper.
- Drizzle with the tzatziki sauce and serve fresh.
Notes
