Ingredients
- 1 pound ground chicken
- ¼ cup diced red onion
- 3 garlic cloves, minced
- ¼ cup sun-dried tomatoes, finely chopped
- 1 cup baby spinach, roughly chopped
- 1 tablespoon fresh dill, chopped
- 2 teaspoons dried oregano
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- 2 tablespoons extra virgin olive oil
Instructions
- In a medium bowl, combine the ground chicken, red onion, garlic, sun-dried tomatoes, spinach, dill, oregano, salt, and pepper.
- Use your hands to mix everything together thoroughly.
- Divide the mixture evenly and form 4 large patties.
- In a large skillet over medium heat, heat the olive oil.
- Cook the patties for about 5 minutes per side, or until golden brown and cooked through.
Notes
Serve on butter lettuce leaves with tzatziki sauce and colorful toppings. For added flavor, you can include feta cheese or olives in the mixture.
