Ingredients
- 1 lb chicken breast, diced
- 1 cup Greek yogurt
- 1 cup feta cheese, crumbled
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers, chopped
- 1 cup spinach
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked quinoa or rice
Instructions
- Preheat the oven to 375°F (190°C).
- In a large oven-safe pan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add diced chicken and cook until no longer pink.
- Stir in cherry tomatoes, bell peppers, spinach, oregano, salt, and pepper.
- Remove from heat and mix in Greek yogurt and feta cheese.
- Layer cooked quinoa or rice on top.
- Bake in the preheated oven for 25-30 minutes, until the dish is bubbly and golden.
- Serve warm.
Notes
For a crustier top, sprinkle additional feta cheese before baking. Adjust seasoning to taste and consider adding a splash of lemon juice for brightness.
