A delightful blend of Mediterranean flavors featuring chicken, Greek yogurt, feta cheese, and fresh vegetables, creating a comforting and wholesome casserole.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup Greek yogurt
  • 1 cup feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, chopped
  • 1 cup spinach
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked quinoa or rice


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe pan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add diced chicken and cook until no longer pink.
  4. Stir in cherry tomatoes, bell peppers, spinach, oregano, salt, and pepper.
  5. Remove from heat and mix in Greek yogurt and feta cheese.
  6. Layer cooked quinoa or rice on top.
  7. Bake in the preheated oven for 25-30 minutes, until the dish is bubbly and golden.

Notes
